Fruit
Wild blueberries from western Massachusetts, New Hampshire and Northern Maine
are used.
Winemaking
The wine is produced very similarly to our Dry Blueberry wine. Blueberries are
fermented on their skins then pressed when desired color and flavor is
reached. The wine continues to ferment and age in stainless steel tanks and then
is bottled with 3.5% residual sugar.
Aging
This wine ages well and takes on some port-like qualities with extended aging.
