Description
Crushed berries, earth and citrus fruit flavors fill the mouth, countered by an
ebullient tart element. This medium-bodied, higly extracted, mildly sweet wine
has an overall high tone and crisp finish.

Fruit
Frozen red raspberries are used from various sources.
Winemaking
Raspberries are fermented as whole fruit to extract color and flavor, then are
pressed. Fermentation and aging are completed in stainless steel tanks for at
least 3 months. The wine is bottled with 10-12% residual sugar in 375 mL
splits.
Aging
We recently received a letter from a customer who had just opened an 11-year-old
bottle of raspberry wine and was raving about its intense, fresh raspberry
flavor and good color. Often there is some pigment separation in older raspberry
wines that does not affect the flavor adversely.
