Description
Our first Pinot Gris is delicately fragrant, clean, simple with lightly citric,
grapefruit, lemon lime and mineral flavors.
Fruit
Pinot Gris is a white wine grape variety of the species Vitis Vinifera. Thought to be a mutant clone of the Pinot Noir grape, it normally has a grayish-blue fruit, accounting for its name ("gris" meaning "grey" in French) but the grape can have a brownish pink to black and even white appearance.
Winemaking
Grapes were destemmed, crushed and pressed and the juice cold settled,
fermented and aged in
stainless steel tanks. The wine
is bottled with less than .2% residual reducing sugar.
Aging
In the bottle the wine ages well for 1-2 years, but is ready to drink as soon as
it rests for a fortnight after bottling.

Compliments dishes flavored with cumin or ginger or paired with trout, fresh
oysters or shrimp cocktail.
