    Fruit
    The grapes used are grown on Apponnagansett Bay in Southeastern Massachusetts.

    Winemaking
    We whole cluster press the grapes, chill and settle the juice overnight, then separate it into small lots. The lots are inoculated separately using 2-4 different yeast strains and then transferred to barrels for fermentation. A malolactic culture is introduced at this time as well. The wine ferments and ages in a mix of American and French oak barrels. The lots are then blended and cold stabilized late the following summer and bottled in the fall.



    Aging
    The wine is released one month past bottling and will age well for 2-4 years.

    Food Pairings and Serving Suggestions
    Excellent with poultry, ham or pork. Serve chilled.
