Description
Known for decades to be the premium producer of outstanding fruit wines, Nashoba
released its first estate grown grape wine on May 1st, 2008. Produced
as a dry wine, our estate Vignoles is rich with tropical notes of pineapple,
melon, honey and citrus. A soft and subtle approach finishes with a lingering
hint of green apple and a lush display of fruit.
Fruit
Vignoles or Ravat 51 is a French-American hybrid grape. It is somewhat winter
hardy and has some similarities to Riesling. We harvested approximately 4 tons
of grapes from our vineyard on October 1, 2007 and October 3rd, 2008.
Winemaking
The juice is fermented in stainless steel tanks with Lalvin 71B yeast. This
yeast strain metabolizes malic acid and produces fruity overtones. The wine is
aged in stainless steel, cold stabilized, then bottled with about 1.0% residual
reducing sugar.
Aging
This light, fruity wine is best when consumed young but will age 1-2 years.
