Special Reserve Black Lager

Black with ruby highlights, this beer is brewed with German Pilsner, Munich and roasted wheat malt for a toasted, slight caramel malt profile with a touch of chocolate. A nice hop bitterness and floral flavor comes from Oregon grown Mt. Hood hops. This beer was fermented cold and lagered for 8 weeks to provide a smooth and crisp flavor.

Alcohol 5.8% ABV, Color 30 SRM, Bitterness 28 IBU

 Food Pairing:  Crabmeat Stuffed Mushrooms with Truffle Aioli

Baby Portobello Mushroom, Maryland Lump Crabmeat, Smith’s Havarti Cheese and Garlic Oil Emulsion enhanced with White Truffle Essence

Belgian Style Double

One of the 3 notable styles to emerge from Trappist breweries in Belgium. This Dubbel style of beer is amber in color and dry with toasted malt aromas and just a hint of caramel. Fermentation with an authentic Belgian yeast yields flavors of black pepper, clove and stone fruits. Alcohol 6.0% ABV, Color 20 SRM, Bitterness 18 IBU.

Food Pairing: Kurobuta Pork Osso Bucco with Smoked Apple Barbeque

Kurobuta pork is a Japanese name for Berkshire pork that comes from a rare breed of pigs, dating back over 300 years to the English House of Windsor. Korobuta means "the black pig" and probably refers to the darker color of this pork. It is the highest quality of pork and, like its beef analogue Wagyu beef, it is known for its meat marbling. The smoked apple barbeque sauce is made in house, using Chef’s secret barbeque technique to yield a fresh, balanced and natural barbeque without the high fructose syrups.

Aurora Black Ale

 

Dark and hoppy, all in the same glass. Our take on the popular Black IPA style uses Aurora and Columbus hops for a pungent, piney hop flavor and aroma. A moderate hop bitterness is balanced by flavors of toffee, toasted nuts and a mild chocolate flavor. The use of bitterless black malt, lends a dark color with ruby highlights, but does not contribute the heavily roasted flavors associated with Porters and Stouts. Alcohol 5.5% ABV, Color 35 SRM, Bitterness 55 IBU

 

Food Pairing: El Trigal DOP Manchego Cheese

Manchego is a DOP cheese (DOP stands for “Denominazione di Origine Protetta”, which means Protected Designation of Origin), which can be made only from the milk of the Manchega sheep that graze in the the region of La Mancha. The pattern on the rind honors a time when the cheese was wrapped in sheets of woven esparto grass. This complex, full flavored Manchego is aged 1 year.

Imperial Stout

Imperial Stout is an extra strong version of stout, which was originally brewed by the British for export to Russia and the Baltic states. This style is opaque black, oak aged with a warming feel from a higher alcohol content. Flavors of toasted oak, bittersweet chocolate, coffee and dried fruit flavors are balanced by a sweet finish. Alcohol 7.5 % ABV, Color 70 SRM, Bitterness 65 IBU
